The artisanal distillation
According to the Brazilian tradition the artisanal cachaças are distilled in copper pot still.
Moreover, the heads and tails of the distillation are removed. Only the distillation heart is kept.
After that, some will be stored in a stainless steel barrel for at least 6 months, a process that helps to oxidize the Acetaldehydes, improving purity and quality of the final product.
Cachaça can be aged officially in 37 different wooden barrels, making it probably, the most versatile distillate in the world.
